Yum! I made this on Monday night after a long & sleepy day.  It was amazing, described by my husband as ‘winter’ it was full of flavour, quick and super easy! The recipe makes enough for 2!

Ingredients:

  • 50g of Plain Yogurt
  • 1 Knorr Garlic Pot
  • 1 lemon
  • 1 carrot
  • 1 red onion
  • 1 slice of brown bread
  • 350g of chicken breast
  • Pinch of salt

Method:

  1. Heat the oven to 200 C and spray a roasting dish with spray oil.
  2. Mix the yogurt & garlic pot together in a bowl
  3. Cut chicken into pieces and mix into the yogurt mix – leave to the side
  4. Cut up the onion & carrot into chunks and lemon into slices
  5. Spoon the garlic chicken into the roasting dish, add all the vegetables and place the lemon slices on top
  6. Sprinkle with bread crumbs & salt
  7. Bake for 20-25 minutes until browned
